This overnight chia pudding takes 5 minutes to prepare and is waiting for you in the morning — thick, creamy, and bursting with wild blueberries. A plant-based breakfast that feels like dessert.
Ingredients
- 4 tbsp chia seeds
- 250ml oat milk (or any plant milk)
- 1 tsp vanilla extract
- 1 tsp maple syrup
- 100g wild blueberries (fresh or frozen)
- Coconut yoghurt and granola to serve
Instructions
- Mix chia seeds, oat milk, vanilla, and maple syrup in a jar or bowl.
- Stir well and refrigerate overnight (or for at least 4 hours).
- In the morning, stir again — it should be thick and pudding-like. Add more milk if too thick.
- Top with wild blueberries, a spoonful of coconut yoghurt, and granola.
Tips
Wild blueberries have a more intense flavour than regular blueberries. Find them frozen in most supermarkets year-round.
